
Easy soup to make on a nice fall day! This potato soup can be made with or without potato chunks! I made this soup one with chunks and one without. Although both were super delicious, I personally enjoyed my soup with potato chunks! Keep reading for the recipe down below!
What You Will Need
Recipe below is for 2 servings)
- 5 medium Golden Yellow Potatoes
- 1 small onion
- Salt and pepper
- Paprika (optional)
- 1 tbsp butter
- 3 cups of broth (Your preference)
- 1 cup of milk (Your preference)
- Immersion blender/any type of blender
- 1 or 2 garlic
How To Make
The first decision is your choice. I used golden yellow potatoes in a bundle. I washed and skinned them before cutting the potato in half and cutting the potato halves into fourths. This way, they are perfect size chunks to keep and to blend, depending on if you would like chunks in your soup or not. Once the potatoes are peeled and cut, place them aside.
Dice the small onion into tiny cubes, once completed, place them aside.
Mince the garlic, your preference on kind and type of garlic, place them aside.
Next, place a medium pot onto the stove, turn the stove to a simmer. Place the amount of butter you prefer, depending on the serving size, into the pot.
Next, add the diced onion into the pot and simmer with the butter for two minutes. Add salt, pepper and paprika (optional) to the pot.
Next, add the garlic, potatoes and broth into the pot. Turn the heat to high and bring broth to a boil. Once to a boil, lower heat and let simmer for 15 minutes or until potatoes are tender.
Once tender, if you are making without potato chunks, blend soup with an immersion blender, or carefully place soup into a blender and blend it all together. If you’re making soup with chunks, carefully strain some of the potato’s into a strainer. strain the broth into the pot with the rest and place the strained potatoes into a separate bowl for now. Place the potatoes to the side. Blend the potatoes in the broth until it is a nice consistency.
Once everything is blended in the pot, add the potatoes that were put to the side, back into the pot. Let everything simmer for another 5 minutes. The potato soup is now ready! Hope you all enjoy!
